First off, if ham is involved, you're off to a good start.
We had a chunk of spiral ham left over, and I love making soup/stew/chili
This is sort of a Cassoulet
1) Simmer down that chunk of pork goodness, make sure to season to your liking. MY liking includes minced garlic, chopped sun dried tomato, chopped onion, vegetable stock, ancho chipotle, ground pepper, ...
2) Rinsed and soaked beans, I use navy beans
3) Carefully pick the aforementioned #1, and strain the broth to remove connective tissue and excess fat
4) Combine #2 and #3 and continue simmering. Season to taste, mine usually includes a little Wright's Liquid Smoke, bourbon (duh!), some caraway seed and fennel seed, and whatever else strikes your fancy

Man Steve, you know how to make a guy hungry who is working thru lunch. Guess its time to take a break and get some grub. Now to see if we have any soup in the house.

Whenever I do a project like this, it pretty much includes whatever is in the cupboard. When I do chili, there are normally 5-7 different beans involved.
