Ok I am getting a Pointman 7 soon and know I should clean and lube it before I shoot it, I have not done this yet on my Nighthawk because I have not put the rounds they suggest before cleaning yet.
so... I am new to the process and a little nervous that I am going to screw something up, I have been watching several videos/DVD on the subject and I think I am ready to tackle the job, my question is when doing this for the first time on the Pointman should I remove the firing pin and extractor, and clean and lube them?

New or used, at least lube it well, I'd pull off the slide so the rails on the frame and slide are fully lubed.
While I don't use grease on any of my guns, lot's of guys do use grease on the rails.
If you don't know anything about the history of the gun, I think you want to lube it up pretty well. You can always clean it up, if it's too dry it can seize up, requiring a trip to the gunsmith. There was a point in time where DW's had some rare problems with seizing, they do a pretty good job of fitting the gun and some were a little too tight.
My rule of thumb on any auto new to me is to run it pretty wet at the beginning.
I went to a bookstore and asked the saleswoman "Were is the Self Help Section?" She said if she told me, it would defeat the purpose.

I had some issues with my wife's PM9. Talked to Keith @ DW. He said that Hoppe's is way too light and will cause galling of the rails because the rails on DW's fit so tight. He said to use FP-10 or DW Lube. I'm using DW Lube. You can buy a "cleaning kit" from DW which includes a bottle of their lube for $10. I bought 2 of them.

out with the new 1911's ?

I would use the that Lil bottle of oil that DW sends with the gun for break in and until it is all
gone, should last through quite a few thousand rounds and after that use what ever ya want.
I think the only issue is the tight tolerance and break in deal. By using that oil you will be
covering your butt on Warranty. After that you should be good to go. Trying to get an opinion
on lube is like asking which brand of beer out there is best, just way to much variety.
Anyway, I use Rem Oil and Coors Lite but..hey..I live where it gets 20 below sometimes.
