It's a pretty simple process if you have the right tool. You need a 1/16 roll pin punch like this:

The end is specially ground so that the point of the punch seats in the roll pin to avoid collapsing the pin or damaging the surrounding metal. Just tap out the pin and the sight will fall right off. Put it back on the same way you took it off. Blue guns need a little extra care than stainless, but either way use a small hammer to tap the pin out or in.
