I'm looking for a holster for my 744 which will work well for the field and won't damage the finish. I'll likely get one for the 4" configuration and one for the 8" setup. Not married to any particular form factor, shoulder/leg/etc., so please provide your insight and recommendations?

If your fieldwork is hunting, then I find that it's hard to beat a shoulder or bandoleer rig from any reputable maker. Nylon will dry faster than leather, if you plan to get wet. All holsters, however, are going to wear the finish on the gun to some degree. Personally I hunt using Uncle Mike's, Galco VHS, and Bianchi HuSH. I change out like my wife changes shoes, so no real preference for maker- just position.
Technically, the glass is always full; half liquid, half air....

Just a few thoughts. A 744 will be stainless so damage to finish will be a mute point as there is no blue to rub off and a scotch bright pad will buff up any minor scratches.
If you use patridge sights stay away from nylon as the sharp corner on the sights will tend to hang up the revolver when pulled from the holster.
Holster position is very subjective to the wearer so you will have to evaluate that one for your needs. (I usually use cross-draw for hunting)
Lastly my thought would be to ( if feasible) try a few different of the inexpensive nylon styles until you find "your" style then spring for a nice (not so inexpensive) leather model.
All just my 2 cents worth.
